To produce Shell and Core ice creams, an advanced technological solution is required, which includes a gravity filler, a sucker, and a volumetric filler.
The gravity filler controls the amount of liquid used to form the fruit shell. The sucker ensures the creation of space for the addition of the milk-based ice cream core.
The volumetric filler then precisely fills the creamy core inside the shell, creating a distinct separation between the outer coating and the core, thus preserving the quality of the final product.
This process ensures that each unit produced has a consistent texture and a perfect presentation. With the same machine, it is also possible to create popsicles or milk-based stick ice creams, without the Shell and Core structure.
